
Homemade Baked Beans
These sophisticated homemade beans are elevated with rich balsamic glaze, maple syrup, and warming spices. Served with toasted sourdough and crunchy Brazil nuts, this healthy and flavorful dish is a perfect plant-based upgrade to a comfort food classic.

Heat the olive oil (1 tbsp) in a saucepan over medium heat. Add the red onion (0.5) and sauté for 3-4 minutes until softened.

Stir in smoked paprika (0.25 tsp), garam masala (0.25 tsp), and dried oregano (1 pinch). Cook for 1 minute until fragrant, then stir in the butter beans (800 g).

Add the chopped tomatoes (400 g), balsamic glaze (1 tbsp), maple syrup (1 tsp), and 100ml water. Bring to a boil, then reduce heat and simmer for 15 minutes.

Season with salt and pepper to taste. Stir in fresh parsley (2 tbsp) and brazil nuts (50 g). Serve alongside toasted sourdough (1 slice) if desired.
