Cook the penne (350 g) in a large pan of boiling salted water for 8-10 mins until cooked. Drain well.

Meanwhile, combine the cherry tomatoes (250 g), onion (0.5 red), juice from lime (1), olive oil (2 tbsp) and most of the fresh coriander (15 g) in a large bowl. Season well with [salt] and [black pepper].

Add the drained penne (350 g) and the avocados (2) chunks to the bowl with the sauce ingredients. Toss everything together. Serve topped with the remaining [fresh coriander].
