Instructions

    Wash the white long grain rice (300 g) in a sieve until clear, then leave to soak in cold water.

    Heat vegetable oil (3 tbsp) in a large saucepan. Fry onion (2) and salt (1 pinch) until golden and crispy. Remove onions to a plate, leaving the oil in the pan.

    Stir garlic cloves (2 clove) and curry powder (2 tbsp) into the pan oil and fry until fragrant.

    Drain the rice and tip into the pan to toast. Add frozen spinach (150 g), frozen green peas (450 g), frozen broccoli (450 g), chickpeas (400 g), and water (600 ml). Boil, then cover and cook on low heat for 10 minutes.

    Rest for 5 minutes, then fluff with a fork. Stir in most of the fresh coriander (15 g) and crispy onions, then serve topped with the remainder.
