
Falafel Wraps with Roasted Garlic Mayo
These speedy falafel wraps are a delicious and easy lunch option. Homemade roasted garlic mayo pairs perfectly with hummus, fresh falafel, and crisp vegetables in a satisfying and flavorful meal.

Preheat the oven to 350°F (180°C). Cut the top 0.5 cm off the garlic (1 head) to expose the cloves.

Transfer the garlic to a baking tray and drizzle with olive oil (1 tsp). Roast for 15 minutes.

Add the falafel (16) to the baking tray with the garlic and bake for another 5 minutes, or according to package instructions.

When cool enough to handle, squeeze the roasted garlic from its peel into a small bowl and mash it with a fork. Then add the vegan mayonnaise (0.25 cup) and mix well.

Spread a generous amount of hummus (0.75 cup) and garlic mayo on each of the bread (4 pita). Add the [falafel] and [vegetables], roll it up, and enjoy!
