Combine extra virgin olive oil (1 tbsp), red wine vinegar (1 tbsp), Italian seasoning (1 tsp), and salt (0.5 tsp) in a small jar; shake to emulsify. Pour over grape or cherry tomatoes (2 lb), [1/4 cup shallot], and garlic (2 cloves) in a bowl; mix well and set aside to marinate.

Warm the remaining extra virgin olive oil (3 tbsp) in a large cast iron pan over medium heat. Add the bagels (3 everything) (chopped) and cook for 2-3 minutes on each side, flipping once brown. Transfer the toasted bagel cubes to a baking tray lined with a paper towel, then set aside.
