
Easy Vegan Mayonnaise
An easy, five-minute eggless mayonnaise that's smooth, creamy and everything a good mayonnaise should be. Made with a silken tofu base, this healthy condiment is perfect for salads, sandwiches, or potato wedges.

Combine all ingredients except for the mustard powder (1 tsp) and olive oil (2 tbsp) in a blender or food processor. Blend until completely smooth.

Gradually add the mustard powder (1 tsp) in ¼ teaspoon increments, blending after each addition and tasting until your preferred level of tanginess and mustard flavor is reached.

With the blender or food processor running on low, slowly drizzle in the olive oil (2 tbsp) until it is fully incorporated and the mayonnaise is glossy and well combined.

Transfer the finished mayonnaise to a sealed container and store in the refrigerator. It makes approximately 350 ml.
