
Easy Vegan French Apple Tart
Indulge in this effortlessly delightful vegan French apple tart. Preheat the oven to 190C / 375F and line a baking sheet with parchment paper. Ensure the puff pastry (375 g) is at room temperature.

Roll the [puff pastry] out to about 0.5 inch thick. Use a plate or pot lid to cut a 10-inch circle.

Use a sharp knife to score an inner border around the circle of pastry, about 0.5 inch away from the edge. Score a criss-cross pattern in the centre of the pastry to prevent it from rising too much in the middle.

Thinly slice the smith apples (2 granny) and arrange them onto the pastry sheet, fanning out from the outside in, overlapping each other.

Brush the border of the pastry with aquafaba (2 tbsp) or plant milk (2 tbsp) and sprinkle the brown sugar (1 tbsp) on top of the [granny smith apples].

Bake in the oven for approximately minutes (30) until the tart is golden and the [granny smith apples] are soft.

Leave to cool on the baking sheet for a moment whilst you heat the apricot jam (2 tbsp) in a saucepan with a [small drop water].

Using a pastry brush, glaze the top of the tart with the [apricot jam].
