
Easy Teriyaki Noodles
These tasty Teriyaki Noodles are a simple, budget-friendly meal. Combine your preferred noodles, favorite vegetables, and a homemade teriyaki sauce for a delicious vegan dinner that’s ready in under 30 minutes. Perfect for busy weeknights, this dish is easily customizable with various vegetables and protein additions.

Cook linguine (8 ounces) according to the package instructions. While the pasta cooks, prepare the teriyaki sauce.

In a small bowl, combine the cloves (4 garlic), fresh grated ginger (1 tbsp), soy sauce (0.5 cup), sweetener (3 tbsp), and rice vinegar (2 tsp) and mix.

Chop carrots (2 medium) into small matchsticks. In a large skillet heated over medium heat, warm vegetable oil (1 tbsp) or broth. Add the [carrots] and green bean (0.5 cup) and cook until they soften, about 3-5 minutes (add [pinto beans] if using).

When the pasta is done, drain it and return it to the pot. Add in the cooked [carrots] and [green bean], and half of the prepared sauce. Toss over medium-high heat for 2-3 minutes to warm and mellow the raw garlic.

Toss in the chopped cilantro (0.5 cup) once removed from heat. Serve immediately while warm. Save the remaining sauce for reheating leftovers.
