Heat the light oil (1 tbsp) in a skillet or large saucepan. Sauté the onion (1 yellow) and garlic (2 cloves) until translucent and lightly browned.

Add the vegetable broth (2 cups), scraping off any bits stuck to the bottom of the pan. Whisk in cocoa powder (2 tbsp), all purpose flour (1.5 tbsp), natural peanut butter (1 tbsp), chili powder (2 tsp), oregano (1 tsp), chipotle powder (0.5 tsp), ground cumin (0.5 tsp), ground cinnamon (0.5 tsp), and salt (0.5 tsp). Bring to a simmer and cook until thickened and very fragrant.

Blend until completely smooth using an immersion blender directly in the pot, or transfer the sauce to a blender. Serve hot. Store leftovers in an airtight container in the fridge for up to a week.
