Instructions

    In a small bowl, mix the vegan mayo (0.25 cup), lemon juice (2 tbsp), ground turmeric (0.75 tsp), cumin (0.5 tsp), curry powder (1 tsp), cayenne (0.25 tsp), salt (0.5 tsp), and black pepper (0.5 tsp) together until fully combined.

    In a large bowl, add the chickpeas (800 g) and mash with a fork or potato masher until chunky and mostly mashed.

    Stir in the finely diced celery (1 cup), finely diced red onion (0.5 cup), spring onions (3 diced), and chopped cilantro (0.25 cup).
