
Curried Carrot & Potato Soup

Heat the olive oil (2 tsp) in a large pot over high heat. Cook the onion (1 large) until lightly caramelized, about 5-7 minutes. Add splashes of [water] as needed to deglaze the pot.

Add the cloves (2 garlic), curry powder (1 tsp), ground coriander (0.5 tsp), ground turmeric (0.5 tsp), and ground allspice (0.25 tsp). Cook for another 2 minutes.

Then add the remaining ingredients: carrots (3), sweet potatoes (2 medium), bouillon cube (1.5 vegetable), and water (4 cups). Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the [sweet potatoes] have softened.

Using an immersion blender, purée the soup to the desired consistency. If using a standing blender, blend half so that some small chunks remain.
