
Crispy Tofu Tacos
These zesty vegan tacos feature extra-firm tofu crumbled and sautéed until crispy, then seasoned with smoky chipotle and chili spices. Combined with hearty black beans and prepared salsa, the filling is broiled for a satisfyingly firm texture. Served in warm tortillas with creamy avocado and fresh cilantro, it’s a high-protein dinner perfect for any night of the week.

Set an oven rack in the upper third and pre-heat the broiler to high.

In a large bowl, whisk extra-virgin olive oil (1 tbsp), soy sauce (1 tbsp), chili powder (1 tsp), chipotle powder (1 tsp), ground cumin (1 tsp), garlic powder (0.5 tsp), and onion powder (0.5 tsp). Crumble extra-firm tofu (1 block) into the bowl and toss thoroughly to coat.

Heat the remaining extra-virgin olive oil (1 tbsp) in a large ovenproof skillet over medium-high heat. Add the tofu crumbles and cook until the tofu is dry and lightly browned.

Stir in black beans (1 can), salsa (0.5 cup), and nutritional yeast (2 tbsp). Cook until the liquid has evaporated and everything is warmed through.

Spread the mixture evenly and place under the broiler until the top is darkened and crispy. Remove from oven, stir, and repeat the broiling process twice more.

Divide the filling between tortillas (8) and top with avocado (1), fresh cilantro (1 handful), vegan cheese shreds (0.5 cup), and cherry tomatoes (1 handful).
