Instructions

    Preheat oven to 375 degrees F (190 C). Wrap your extra-firm tofu (16 ounces) in an absorbent towel and set something heavy on top (like a cast iron skillet) to press out extra moisture for minutes (5). Alternatively, use a tofu press.

    Unwrap the tofu and cut into small cubes. Add to a medium mixing bowl and season with a pinch sea salt (1 healthy) and desired seasoning (1 tsp), varying the seasoning based on your dish (e.g., curry powder for curry, BBQ seasoning for BBQ, or just salt for neutral flavor).

    Heat a large oven-safe metal or cast iron skillet over medium heat. Once hot, add the avocado oil (1 tbsp) and the seasoned tofu. Sauté for minutes (5), shaking/flipping occasionally to cook on all sides, until the tofu has a slight crust and begins to brown.

    Transfer the skillet to the oven and bake for about minutes (15), or until the tofu is firm to the touch and has begun to dry out and crisp up. The longer it bakes, the firmer it gets.
