Instructions
- 1
In a medium bowl, whisk together olive oil (0.5 tbsp), tamari (3 tbsp), rice vinegar (1.5 tbsp), maple syrup (1.5 tbsp), toasted sesame oil (2.5 tsp), liquid smoke (2.5 tsp), smoked paprika (0.75 tsp), onion powder (0.5 tsp), cayenne pepper (0.25 tsp), and kosher salt (0.25 tsp).
- 2
Slice the tempeh (1 block) crosswise into strips about 0.125 inch thick.
- 3
Transfer tempeh to a bag or shallow dish, pour the marinade over, and toss to coat. Marinate in the fridge for at least 60 minutes, or up to 8 hours for maximum flavor.
- 4
Heat a large nonstick frying pan over medium heat with olive oil (1 tbsp). Arrange half the tempeh slices in a single layer.
- 5
Cook for 3 minutes, then brush the tops with reserved marinade and cook for 1 more minute until the bottoms are well browned.
- 6
Flip each piece and cook for 2.5 minutes. Brush more marinade on top during the final minute. Transfer to a paper towel-lined surface and season with smoked sea salt (1 sprinkle).
- 7
Wipe the pan and repeat the process with the remaining tempeh and olive oil (0.5 tbsp).
