These deep-fried mushrooms offer an incredible texture, perfect as a starter or snack. Enjoy them straight from the pan! You can use one type of mushroom or a mixture, tearing them into various sizes for different textures and flavours.

Prepare your flavoured vinegar: combine fresh tarragon (4 sprigs), fresh thyme (2 sprigs), peppercorns (6 white), and garlic (2 cloves) in a bottle. Top with white wine vinegar (400 ml), ensuring all ingredients are fully covered. Steep for at least a few hours, or up to several weeks for enhanced flavour. Strain and bottle the vinegar for prolonged use.

Fill a deep pan with olive oil (1 litre) and heat over medium. On a large plate, mix plain flour (100 g), a generous [pinch sea salt], [pinch ground black pepper], and zest (1 lemon). Cut or tear mixed mushrooms (4 handful) into uneven chunks and moisten them with a bit of water. Toss them in the seasoned flour until lightly coated.

Test the oil with a small piece of potato; it's ready when it sizzles and browns. Deep-fry mushrooms in batches (about a handful at a time) until golden brown, approximately [3-4 minutes].
