
Crispy Carrot Fries
These crispy carrot fries are a delightful treat that feels indulgent yet is light and satisfying. Perfectly seasoned, the natural sweetness of the carrots intensifies as they caramelize, achieving a wonderfully crunchy exterior and a soft interior. They are simple to prepare in the oven or air fryer, making them an excellent snack or side dish.

Preheat your oven to 425 degrees Fahrenheit and line 2 - 13x18" baking sheets with parchment paper. Cut the carrots (2 lb) into thin sticks.

Place the carrot fries in a large bowl and toss with the cornstarch (2 tbsp). Add the garlic powder (1 tbsp), onion powder (1 tbsp), italian seasoning (1 tsp), salt (0.5 tsp), and pepper (0.5 tsp) and toss again. Drizzle the avocado oil (2 tbsp) over the top and toss it one more time until the spices create a sort of light batter on the fries. This is easiest with your hands.

Divide the carrot fries between the two baking sheets, making sure none of the fries are touching each other.

Bake for minutes (15) and then remove the trays from the oven and turn each of the fries over.

Put them back into the oven for another minutes (10), or until they are brown and crispy. Serve with some [finely minced parsley] over the top.
