Preheat oven to 250 degrees F (121 C) and position oven rack in the center of the oven.

Rinse and thoroughly dry the [sweet potatoes] and slice them as uniformly thin as possible (~0.125-0.063 inch thick slices). Use a mandolin if available, otherwise a very sharp knife for uniform thinness. Thicker slices may not crisp fully.

Toss slices with olive oil (2 tbsp) to lightly coat, then sprinkle with sea salt (0.25 tsp). Arrange in a single layer on a parchment-lined baking sheet and bake for 1 hour 30 minutes to 1 hour 45 minutes, flipping at the halfway point to ensure even cooking. Rotate the sheet if needed. Check every 10 minutes during the second hour to prevent burning, as thickness affects cooking time.
