
Coconut Toffees
These magical 4-ingredient caramels or toffees are crafted from paleo-friendly ingredients. They are incredibly easy to make and serve as delightful homemade gifts, especially for those avoiding refined sugars and dairy. Enjoy their amazingly chewy yet soft texture and natural sweetness.

Line an 8x8 baking tray with greaseproof paper and set aside.

Combine all ingredients (coconut sugar (400 g), coconut cream (750 ml), coconut oil (6 tbsp), optional sea salt (1 pinch), optional vanilla extract (1 tsp)) in a large pot on the stove and bring to a boil.

Stir the ingredients as they reach boiling point, then reduce to medium heat. Continue stirring.

Maintain a medium boil and stir occasionally for about minutes (20) or until the mixture has reduced and thickened. To test for readiness, drop a small piece onto a tray with a spoon; it should solidify within a minute. If it remains liquid, continue cooking.

Carefully pour the mixture into the prepared baking tray and allow to cool and set.

If the mixture separates slightly, do not worry; it will still turn out perfectly.

Let it set in the fridge for about hour (1) before cutting into small caramel pieces.
