
Coconut Lime Watermelon Slushie
This super simple watermelon slushie combines coconut milk and lime juice for a refreshing, naturally sweetened summer treat. Perfect for cooling down on hot days.

Halve a ripe watermelon (1 small) and scoop out cubed pieces. Arrange on a parchment-lined baking sheet. Freeze until firm.

Halve another watermelon (1 small), add the fruit (without rind) to a blender. Blend on high, adding a touch of [water] if needed, until smooth.

OPTIONAL: Strain the [watermelon juice] through a dish towel into a mixing bowl for extra smoothness. Transfer to a mason jar, cover, and refrigerate.

Once frozen watermelon (4 cups) is firm, combine it with coconut milk (0.33 cup), lime (1 medium) juice, and watermelon juice (0.5 cup) in a blender. Blend on low until creamy. Scrape down sides as needed. Add more [watermelon juice] if blending is difficult.

Taste and adjust flavor. Add more [coconut milk] for creaminess, [lime] for brightness, sea salt (1 pinch) to enhance sweetness, or maple syrup (1 tbsp) to sweeten. Blend again.

Serve in empty watermelon rinds or chilled serving glasses. Garnish with a [lime wedge].
