Instructions

  1. 1

    Preheat your oven to 325 degrees F (162 C).

  2. 2

In a large mixing bowl, combine gluten-free rolled oats (1.5 cup), flaked unsweetened coconut (0.5 cup), blanched slivered almonds (0.5 cup), pecan halves (0.5 cup), coconut sugar (1 tbsp), and sea salt (0.25 tsp).

  3. 3

In a small saucepan over medium heat, warm coconut oil (3 tbsp) and maple syrup (0.33 cup) for 3 minutes, whisking frequently until fully combined. Whisk in pure vanilla extract (1 tsp).

  4. 4

Immediately pour the wet mixture over the dry ingredients and stir until the oats and nuts are thoroughly coated.

  5. 5

Spread the mixture into an even layer on a parchment-lined baking sheet. Bake for 20 minutes without stirring to help the chunks form.

  6. 6

Remove the pan, rotate it for even browning, and bake for another 7 minutes until golden brown and fragrant.

  7. 7

Let the granola cool completely on the pan to set the clusters. Break into clumps and mix in dried blueberries (0.25 cup).
