
Chunky Coconut Granola
These dreamy clusters are extra-crunchy and infused with coconut flavor three ways. Naturally sweetened and butter-free, this nutty mix is loaded with healthy fats and fiber, making it the perfect wholesome breakfast or snack.

In a large mixing bowl, combine gluten-free rolled oats (1.5 cup), flaked unsweetened coconut (0.5 cup), blanched slivered almonds (0.5 cup), pecan halves (0.5 cup), coconut sugar (1 tbsp), and sea salt (0.25 tsp).

In a small saucepan over medium heat, warm coconut oil (3 tbsp) and maple syrup (0.33 cup) for 3 minutes, whisking frequently until fully combined. Whisk in pure vanilla extract (1 tsp).

Immediately pour the wet mixture over the dry ingredients and stir until the oats and nuts are thoroughly coated.

Spread the mixture into an even layer on a parchment-lined baking sheet. Bake for 20 minutes without stirring to help the chunks form.
