In a saucepan, combine the quinoa (1 cup), unsweetened soy milk (1.5 cups), canned full-fat coconut milk (1.67 cups), light brown sugar (3 tbsp), ground flaxseeds (3 tbsp), dutch-process cocoa powder (3 tbsp), pure vanilla extract (2 tsp), ground cinnamon (0.5 tsp), and salt (0.25 tsp). Bring to a boil, then reduce to a gentle simmer.

Add the bananas (2) (sliced) into the porridge and stir. Simmer for 20-25 minutes, partially covered, until the quinoa has absorbed all the liquid and the bananas are cooked down.

Remove from the heat and cover for 5 minutes before serving. Top with fresh mixed berries (1 cup) and unsweetened coconut yogurt (1 cup). Enjoy!
