
Chocolate Peanut Butter Cookies

Melt plant based butter (0.5 cup) in a medium saucepan over medium heat. Whisk in granulated sugar (1 cup), plant based milk (0.5 cup), and cocoa powder (0.25 cup) until smooth. Bring the mixture to a rolling boil and maintain for 2 minutes to thicken.

Remove from heat and stir in creamy peanut butter (0.75 cup) and vanilla extract (1 tsp) until smooth. Fold in rolled oats (3 cup) until well combined.
