Instructions

    Line an 8x8 inch square baking dish with parchment paper.

    In the bowl of a food processor, combine the medjool dates (8 oz), roasted cashews (1 cup), tahini (0.75 cup), and vanilla extract (2 tsp). Pulse until smooth and no large chunks remain, approximately 4 minutes.

    Press the mixture firmly into the prepared baking dish. Transfer to the freezer until firm, about 60 minutes.

    Melt the vegan chocolate (12 oz) in the microwave until smooth. Let the chocolate cool for 10 minutes.

    Cut the slab into 16 bars. Dip each bar in the melted chocolate and sprinkle with sesame seeds (1 sprinkle). Let the chocolate set for 10 minutes before storing in the fridge.
