
Chocolate Chunk Banana Bread

Preheat your oven to 350°F (180°C) and lightly grease an 8.5 x 4.5 inch loaf pan with a little [null null vegetable oil].

In a large mixing bowl, combine the ground flaxseed (2 tbsp) and water (0.25 cup). Let the mixture sit for about 2 minutes until it thickens into a gel-like consistency.

Add bananas (3) to the bowl and mash them thoroughly using a fork or potato masher.

Stir in the vegetable oil (0.25 cup), granulated sugar (0.5 cup), unsweetened applesauce (0.25 cup), pure vanilla extract (1 tsp), ground cinnamon (1 tsp), baking soda (1 tsp), baking powder (0.5 tsp), and salt (0.5 tsp) until the mixture is well combined.

Gradually add the all purpose flour (1.75 cup) to the bowl and gently mix until the batter is just partly combined.

Fold in most of the dark dairy free chocolate (3.2 oz), leaving a small amount aside to sprinkle on top. Pour the batter into the prepared pan and top with the remaining chocolate.

Bake on the middle rack for approximately 55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
