Instructions
- 1
Preheat oven to 375˚F (190˚C). In a large bowl, add non dairy butter (0.5 cup) and brown sugar (1 cup). Beat with a mixer (stand or hand) until light and creamy for about 2-3 minutes.
- 2
Add non dairy milk (0.25 cup), vanilla extract (1 tsp), baking soda (1 tsp), sea salt (0.5 tsp), and baking powder (0.5 tsp). Beat until combined (about 15-20 seconds).
- 3
To the same bowl, add all purpose flour (2 cups) and mix with a spatula until almost completely combined (dough should be soft and pliable).
- 4
Add dairy free chocolate chips (1 cup) to the bowl and use a spatula to fold the chips in until fully combined, careful not to overmix.
- 5
Drop oven temperature to 350˚F (177˚C). Use a cookie scoop to make 12 cookies and place on a parchment lined baking sheet. If desired, place a few more [dairy free chocolate chips] and [salt flakes] around the top of each cookie.
- 6
Bake the cookies for 10-12 minutes for a crispy outside with a slightly underdone middle, or 13-16 minutes for best results. Remove from oven and let rest about 15-20 minutes to set. Sprinkle [salt flakes] on top if desired. Store any leftovers in an airtight container with a slice of [bread] for soft cookies or in a glass container for firmer cookies.
