Instructions

  1. 1

Preheat your oven to 175C. Grease a 9-inch loaf pan and line it with parchment paper, leaving some overhang on the sides.

  2. 2

In a large bowl, whisk together the all purpose flour (1.33 cup), cornstarch (1 tbsp), cocoa powder (0.5 cup), baking powder (1 tsp), baking soda (1 tsp), and salt (0.5 tsp).

  3. 3

In a separate container, mash the bananas (2) with a fork, then stir in the non dairy milk (0.39 cup), oil (0.33 cup), sugar (0.5 cup), vanilla extract (1 tsp), and apple cider vinegar (1 tsp).

  4. 4

Pour the wet banana mixture into the dry flour mixture and stir until just combined.

  5. 5

Transfer the batter into the pan and sprinkle the chocolate chips (1 handful) on top. Bake for 40 to 50 minutes until a toothpick comes out clean.

  6. 6

Allow the bread to cool completely in the pan before removing it using the parchment paper overhang. Slice and serve.
