
Broccoli Onion Pakora
These simple and flavorful vegan pakoras (spiced chickpea flour fritters) use just a handful of ingredients, are easy to make, baked or air-fried rather than fried, naturally gluten-free, and ready in under 30 minutes! Once baked, enjoy these mixed vegetable pakoras as a tasty appetizer, snack, or side.

Preheat oven to 450 degrees. Lightly oil a baking sheet with high heat oil (1 tbsp) or use parchment paper.

In a medium mixing bowl, combine chickpea flour (1 cup) with salt (0.5 teaspoon), cumin (1 teaspoon), turmeric (1 teaspoon), and [pinch cayenne pepper]. Stir well.

Gradually add water (0.75 cup) (as needed) to form a thick, lump-free pancake batter. If a full cup is needed, add the remaining water (0.25 cup).

Add thinly sliced yellow onion (1 cup) and finely chopped broccoli (1 cup) to the batter and stir.

Spoon large dollops onto the baking sheet, spaced 1-2 inches apart.

Bake for minutes (7) on each side, flipping when bottoms are brown and crispy. Total bake time is 14-16 minutes.
