Instructions

    Preheat the oven to 190°C (170°C fan/Gas Mark 5).

    Heat the olive oil (1.5 tbsp) in a large saucepan or deep lidded frying pan. Add the onion (1 large), sticks (2 celery) and bell pepper (1 red) and cook, covered, for 8-10 minutes over a medium-low heat until softened. Add the cloves (2 garlic), smoked paprika (0.5 tsp) and tomato puree (1 tbsp), then cook for 1-2 minutes more, stirring.

    Mix in the passata (1000 g), mixed beans (1200 g), dark brown sugar (2 tbsp), vegan worcestershire sauce (1 tsp) and tabasco (0.5 tsp). Season to taste with [celery salt to_taste].

    Transfer everything to a large, wide ovenproof dish (about 3 litre capacity), cover with foil and bake for 45 minutes, stirring halfway. Serve the spicy beans on [toast to_serve] or baked potatoes, scattered with [chives to_garnish] if you like.
