
Vegan Black Bean Lettuce Wraps

Pull apart romaine (12 leaves) from heads of romaine.

Cook black beans (2 cans) in their juice in a saucepan over medium heat for a few minutes. Drain and return to the saucepan. Add soy sauce (0.5 teaspoon), [cayenne] (to taste), [chili powder] (to taste), and [cumin] (to taste). Stir and reheat until heated through.

If using frozen, bring a little layer of [water] to a boil in a saucepan. Add about frozen corn (0.5 bag). Cover and simmer until warmed.

Layer [romaine leaves] with [black beans], then [corn kernels], then [grape tomatoes], then [avocado] chunks. Drizzle [salsa], [lime], and [cilantro] on top (if using) and serve.
