Instructions
- 1
Mix eggs (3 chia) with water (0.25 cup) in a small bowl and set aside for 5 minutes to thicken. If you don't have ground chia seeds, simply blend whole chia seeds in a grinder or blender for a few seconds.
- 2
Rinse the black beans (1 can) very well in a sieve, then drain and pat dry.
- 3
Process the oats (0.67 cup) and sunflower seeds (0.5 cup) in a food processor or blender using the pulse function.
- 4
Next, add all the other ingredients for the burgers (tomato paste, soy sauce, garlic cloves, onion, chia eggs, onion powder, smoked paprika, ground cumin, red pepper flakes, sea salt, black pepper, fresh parsley) to the food processor and mix. Do not overmix to retain some texture.
- 5
Form 4 burger patties with your hands. If the mixture is too sticky, add more [oats]. If too dry, add a little [water].
- 6
Heat some [oil] in a large frying pan and add the four burger patties. Fry on both sides until they firm up, about 12-15 minutes total. Brush some [vegan barbecue sauce] or Sriracha onto the burgers after flipping for more flavor.
- 7
Assemble the black bean burgers with buns (4 burger) of your choice and add fresh ingredients such as onion rings, tomato slices, cucumber slices, [fresh veggies of choice], avocado, and [vegan cheese]. Serve with homemade crispy Oven-Baked Potato Wedges and Vegan Onion Rings.
