Banana Protein Muffins

These fluffy, satisfying, and incredibly delicious muffins are a perfect healthy breakfast or snack. Made in one bowl with simple ingredients, they are low in sugar, gluten-free, and oil-free, coming together in under 30 minutes.

Instructions

    Pre-heat oven to F (425) (C (220)).

    In a large bowl, whisk bananas (365 g), coconut sugar (20 g), plant milk (3 tbsp), vanilla (1 tsp) and cinnamon (1 tsp) until combined.

    Add in oat flour (69 g), gluten free flour (69 g), vegan protein powder (75 g), baking powder (1.5 tsp) and baking soda (1 tsp). Mix with a spatula until a thick batter forms. If the batter is too thick, add an extra plant milk (1 tbsp).

    Divide the batter into tins (8 muffin). Bake for minutes (5) at F (425) (C (220)). Reduce temperature to F (350) (C (175)) and bake for another [15-20 minutes] until cooked through. A toothpick inserted in the center should come out clean.

    Remove from oven and let cool in the pan for minutes (5). Transfer to a cooling rack and let cool for another minutes (10) before eating.
