
Vegan Banana Mochi Cake

Preheat oven to 350° and grease a baking dish (around 8x8) with [coconut oil].

In a large mixing bowl, combine the dry ingredients: whole spelt flour (1.25 cup), mochiko (1.25 cup), baking soda (1.5 tsp), cinnamon (0.5 tsp), ground cardamom (1 tsp), and sea salt (0.25 tsp). Whisk well.

In another large mixing bowl, combine the wet ingredients (excluding the chocolate chips): ground flax (2 tbsp) + water (0.25 cup) (blended together to thicken for at least 5 minutes), bananas (3 ripe) (mashed), sugar (0.5 cup), instant espresso (0.5 tbsp), vanilla (2 tsp), coconut oil (0.5 cup), and non dairy milk (0.75 cup). Mix until smooth.

Pour the wet ingredients into the dry ingredients and mix. Be careful not to over mix.

Fold in the dark chocolate chips (0.5 cup), then pour the batter into the greased baking dish.
