
Banana Churros Nice Cream Cups
These delightful churros cups offer a plant-based twist on a classic dessert. Crispy churros are filled with a creamy banana nice cream, topped with melted chocolate, crunchy hazelnuts, and a dusting of cinnamon sugar. They're a naughty yet nice treat, perfect for any occasion.

Put the water (475 ml), sugar (200 g), vegetable oil (2 tbsp), salt (0.5 tsp) and vanilla extract (0.5 tsp) in a pan and heat. Once warm and blended, add the plain flour (240 g) and stir into a sticky dough. Let it cool, then fill a piping bag. Flip a muffin tray upside down and grease the inverted cups with oil. Pipe the churros batter around each cup. Freeze for about 60 minutes until solid.

Carefully drop each frozen churros cup into hot vegetable oil for frying (1 litre) (180°C) and fry for a few minutes until golden brown. Roll each churros cup in [cinnamon sugar].

Blend the bananas (3 frozen), maple syrup (1 tbsp), and cinnamon (2 tsp) until smooth while bananas are still frozen. Serve the nice cream in the churros cups, drizzling over [dark chocolate melted], [hazelnuts crushed], and a sprinkle of [cinnamon sugar].
