Gently blot the block of tofu (16 ounces) with paper towels.

Cut [tofu] into 0.75 [inch] thick pieces (strips, cubes, squares, or filets) and place on a parchment-lined baking sheet. Season with [salt] and [black pepper].

Choose your marinade:

For **Sesame Ginger Marinade**: Blend toasted sesame oil (2 tbsp), soy sauce (3 tbsp), miso (1 tbsp), ginger (0.5 tbsp), garlic cloves (2 clove), rice vinegar (1 tbsp) (optional), and chili paste (2 tsp) (optional) until smooth. Pour over [tofu], coating well. Sprinkle with sesame seeds (1 tbsp).

For **BBQ Tofu Marinade**: Mix bbq sauce (0.75 cup) and sriracha (2.5 tsp) (or red chili paste) in a small bowl. Adjust heat to taste. Stir in olive oil (1 tbsp) if desired for extra crispiness. Liberally coat the [tofu] with the mixture.

For **Mexican Tofu Marinade**: Stir olive oil (3 tbsp), apple cider vinegar (1 tbsp), cumin (1 tsp), chili powder (1 tsp), granulated garlic (1 tsp), kosher salt (0.75 tsp), chipotle powder (0.4 tsp), smoked paprika (0.5 tsp), and mexican oregano (1 tsp) (optional) in a small bowl. Brush the marinade on the [tofu].

Bake until crispy- 25-35 minutes. For extra crispiness, use convection or broil for a couple of minutes at the end.
