Preheat the oven to 375 degrees F. Using an apple corer or paring knife, remove the stem and core of the apples (2 medium), leaving the bottom intact. Mix the brown sugar (2 tbsp), uncooked oatmeal (2 tbsp), chopped walnuts (2 tbsp), raisins (2 tbsp), cinnamon (0.25 tsp), [pinch grated nutmeg], [pinch ground cloves], and kosher salt (0.5 tsp). Stuff apples with the mixture. Top each apple with vegan margarine (0.5 tbsp) and place in a baking dish.

Add boiling water (1 cup) to the baking dish, cover loosely with foil, and bake for minutes (20). Remove the foil, and bake for minutes (20) more. Remove from the oven, transfer to a plate, and let cool 5-10 minutes before serving.
