Instructions

  1. 1

Preheat your oven to 180C (350F) and line a baking sheet with parchment paper.

  2. 2

Boil frozen peas (250 g) in a medium saucepan with water according to package instructions, then drain thoroughly.

  3. 3

Heat olive oil (1 tbsp) in a frying pan and sauté white onion (1 large) and garlic cloves (3 clove) for a few minutes until they are softened.

  4. 4

Transfer the cooked peas, onions, and garlic to a food processor and pulse until the mixture becomes a thick, textured paste.

  5. 5

In a mixing bowl, stir the paste with chickpea flour (140 g), bicarbonate of soda (1 tsp), salt (1 pinch), and mixed herbs (2 tbsp).

  6. 6

Using wet hands to prevent sticking, shape the mixture into 10 round patties and arrange them on the prepared baking sheet.

  7. 7

Lightly brush the tops of the fritters with extra olive oil (1 tbsp) and bake for 15-18 minutes until golden brown, flipping them over at the halfway point.

  8. 8

Prepare the dip by combining soy yogurt (250 g), fresh herbs (2 tbsp), lemon juice (1 tbsp), and pepper black (1 pinch) in a small bowl.

  9. 9

Serve the fritters hot out of the oven accompanied by the herby yogurt dipping sauce.
