
Baked Crispy Peanut Tofu
These savory-sweet tofu bites are baked to a perfect crisp before being glazed in a rich, spicy peanut sauce. This high-protein main is inspired by Thai and Indonesian flavors and serves as a versatile addition to any Asian-inspired meal. Effortless to prepare and naturally gluten-free, it pairs perfectly with fluffy rice or fresh greens.

Preheat oven to 204C and line a tray with parchment. Press extra firm tofu (14 oz) for 20 minutes to remove excess moisture.

Prepare the peanut sauce by whisking creamy peanut butter (2.5 tbsp), tamari (2 tbsp), chili garlic sauce (1 tbsp), lime juice (1 tbsp), maple syrup (2 tbsp), and sesame oil (2 tsp) in a small bowl. Set aside.

Cube the pressed tofu and toss with tamari (3 tbsp), chili garlic sauce (1 tsp), toasted sesame oil (1 tsp), and maple syrup (1 tbsp). Let marinate for 3 minutes.

Transfer the marinated tofu to a bag, add cornstarch (4.5 tbsp), and toss until each piece is well coated.

Bake the tofu for 20-25 minutes, flipping at the 18-minute mark until firm and lightly browned.

Heat a large skillet over medium heat. Add the baked tofu and the prepared peanut sauce. Sauté for 2 minutes until hot and fully glazed. Serve with [white rice] or [cauliflower rice].
