Preheat oven to 200°C and line a baking tray with paper or foil.

Heat vegetable oil (1 tbsp) in a frying pan and cook the onion (1) for 5 minutes on medium heat, until softened and browned.

Tip the onion into a food processor with the leftover potatoes (500 g) and leftover cooked vegetables (150 g). Mix for a few seconds until chunky but holding together.
