Instructions

    Preheat oven to 200°C and line a baking tray with paper or foil.

    Heat vegetable oil (1 tbsp) in a frying pan and cook the onion (1) for 5 minutes on medium heat, until softened and browned.

    Tip the onion into a food processor with the leftover potatoes (500 g) and leftover cooked vegetables (150 g). Mix for a few seconds until chunky but holding together.

    Roll the mixture into balls, then flatten slightly into patties before placing them on the baking tray. Brush with the remaining vegetable oil (1 tbsp).

    Bake for 25 minutes until golden brown and crispy.

    Serve on their own, with [ketchup] or with [vegan sausages] for a hearty breakfast.
