Instructions

    Lightly grease a 9 x 12 inch (23 x 31 cm) baking dish and preheat the oven to 350°F (180°C).

    Add the flax seeds ground (1 tbsp) and water (3 tbsp) to a large bowl. Mix and let rest for 5 minutes to gel.

    Add the banana (2) to the bowl and mash well. Then add the soy milk (1.5 cup) and pure vanilla extract (1 tsp), and stir to combine.

    Then add all the rolled oats (2 cup), ground cinnamon (2 tsp), baking powder (1 tsp), salt (0.5 tsp), and pecans (0.33 cup). Mix.

    Gently fold in the blueberries (0.75 cup) and strawberries (0.75 cup).

    Pour the mixture into the baking dish. If desired, decorate the top with some more berries and pecans. Bake on the centre rack of the oven for 35 - 40 minutes, or until firm and lightly golden.

    When removed from the oven, allow it to cool for a few minutes before slicing. Add desired toppings, like soy yogurt (1 cup) and almond butter (0.33 cup), and enjoy!
