
Baked Apple Pancake
This thick, custardy baked apple pancake is a comforting vegan twist on a childhood classic. Sliced apples are softened in plant butter with brown sugar and cinnamon before being enveloped in a light batter and baked until golden. In a small bowl, whisk together the brown sugar (0.25 cup) and cinnamon (0.5 tsp).

In a separate mixing bowl, whisk the vegan egg (0.75 cup) and almond milk (0.5 cup) until well combined.

Add the all purpose flour (2 tbsp) and baking powder (0.25 tsp) to the liquid mixture and stir until smooth.

Heat the plant butter (2 tbsp) in a 12-inch oven-safe skillet over medium heat. Add the apples (3) and 1 tablespoon of the cinnamon sugar mixture. Cook, stirring occasionally, until the apples are softened, about 5 minutes.
