
Asparagus Radish Salad
This vibrant and healthy salad highlights the earthy flavor of tender asparagus, dressed in a zesty fresh ginger, chili, and lime dressing. Toasted hazelnuts and peppery radishes add a delightful crunch to this speedy dish, ready in just minutes.

Cook the fine green beans (100 g) in a pan of salted, boiling water for mins (3), or until tender. Drain, refresh under a cold tap and drain again. Arrange on a serving platter with the asparagus (250 g), onions (2 spring), radishes (100 g), fresh dill (1 handful) and fresh mint (1 handful).

To make the dressing, combine the fresh ginger (25 g), garlic (1 clove) and chilli (1 green) in a small bowl. Add the lime (1) and sesame oil (1 tbsp). Season with a salt (1 pinch), black pepper (1 pinch) and sugar (1 pinch); mix well.

Scatter the hazelnuts (1 tbsp) over the salad and spoon over the dressing.
