Wash and dry the apples (2 green), stalks (5 celery) and onions (4 green). Cut each [green apple] in half and then into thin slices. Slice the stalks (5 celery) and onions (4 green) thinly also.

Roughly chop the unsalted peanuts (0.25 cup).

In a large mixing bowl, combine the sliced [green apples], [celery stalks], [green onions], shallot (1 tbsp), unsalted peanuts (0.25 cup), lemon juice (2 tbsp), olive oil (0.25 cup), fine sea salt (0.5 tsp) and black pepper (0.25 tsp). Toss until well-combined.
