
5-Minute Vegan Cashew Queso
This creamy vegan queso is ready in just 5 minutes! Cheesy, quick, and easy to make, it's perfect for serving with nachos, burrito bowls, tacos, and more. This non-traditional version is inspired by the creaminess and heat of chile con queso, with a hint of North African flavor from harissa.

Add all hot water (0.75 cup), raw cashews (1 cup), garlic (1 clove), nutritional yeast (2 tbsp), ground cumin (0.5 tsp), chili powder (1 tsp), salt (0.5 tsp), and harissa (1 tbsp) to a blender and blend until creamy. Add more [hot water] or [raw cashews] to adjust consistency.

Taste and adjust flavor with more [nutritional yeast], [salt], [ground cumin], [chili powder], [harissa], or [garlic] as desired.
