
Vegan Jackfruit Gyros
These delicious vegan gyros feature pork-style baked jackfruit, perfect for a satisfying lunch or snack. Its authentic Greek flavors and textures evoke Mediterranean holidays.

Drain both green jackfruit (2 tin). Cut the firm, pointy ends off each triangular piece of [green jackfruit]. Set aside.

Heat up olive oil (4 tbsp) in a medium, heavy-bottomed, pan. Fry onion (1 red) until softened, translucent and lightly caramelised. Add garlic (4 clove) and fry off gently until soft and fragrant.

Add most of the spices: ground cloves (0.125 tsp), ground cinnamon (0.25 tsp), ground cumin (0.5 tsp), and dried oregano (2 tsp) to the onion-garlic mixture. Fry them off gently, stirring the whole time, for a minute or so.

Mix in the tomato paste (2 tbsp).

Now add in the prepared [green jackfruit] along with soy sauce (4 tbsp), maple syrup (2 tbsp) and apple cider vinegar (2 tsp). Mix everything really well. Squash the [green jackfruit] pieces with your mixing spoon so that the individual fibres separate more. Season with white pepper (0.25 tsp) and a pinch of chilli powder (0.5 tsp) if you wish. Simmer the mixture gently for another 10-15 minutes and then allow it to cool down. Place in the fridge overnight to intensify the flavour.

Just before you are ready to assemble your gyros, set the oven to 200° C / 390° F (fan function). Spread the [green jackfruit] pieces on a baking paper-lined baking tray and bake for about 20-25 minutes, until a little caramelised and browned around the edges.

Heat the oven to 200° C / 390° F (fan function) and line a baking tray with a piece of baking paper.

Scrub potatoes (2) well (or peel them) and cut them into thick matchsticks of similar size.

Coat them in [olive oil] (about 1 tbsp) and spread them on a baking tray, making sure they don't overlap.

Bake for about 30 minutes (until browned in places), flipping them to the other side half way through.

Season with [fine salt] and [dried oregano].

Just before serving, warm pitas (6) up in a low oven.

Place warmed-up pitas (6) on a work surface, fluffier side down.

Fill with romaine lettuce (6 leaves), cucumber (1), sweet cherry tomatoes (1 handful), onion (1 red), baked [green jackfruit] and warm [potato fries].

Gently fold the pitas (6) over the filling, wrap in a piece of paper and tie with a string. Serve with a generous dollop of [vegan tzatziki].
