To a sauté pan over medium-high heat, cook the pepper (1 bell) and canned young green jackfruit (2 cups) in the vegetable oil (1 tbsp) for 3 - 4 minutes.

Meanwhile, combine the sauce ingredients in a jar.

Add the fresh udon noodles (14.109 oz) and the white and light green parts of the green onion (1 stalk) to the pan. Gently break the noodles apart, cooking for 2 minutes.
