
BBQ Jackfruit Pizza
Smoky pulled jackfruit and creamy vegan mozzarella make an incredible plant-based alternative to pulled pork pizza. This easy recipe features a homemade tangy barbecue sauce and crisp multigrain flatbreads for a healthy, flavorful meal that's perfect for pizza night.

Prepare vegan mozzarella (0.5 cup) and refrigerate to firm up before use.

Drain and rinse green jackfruit (20 oz) very well. Pulse in a food processor until shredded but still chunky.

Whisk ketchup (0.5 cup), apple cider vinegar (0.25 cup), water (0.25 cup), soy sauce (2 tbsp), maple syrup (1 tbsp), yellow mustard (1 tbsp), smoked paprika (1 tsp), garlic powder (1 tsp), and onion powder (1 tsp) in a small bowl.

Place the shredded jackfruit in a pan, pour the sauce on top, and sauté over medium heat for 10 minutes until the sauce is mostly absorbed.

Preheat your oven to 425F (220C) and line a baking tray with parchment paper.

Place flatbreads (2 slice) on the tray. Spread the BBQ jackfruit evenly, dollop on the vegan mozzarella (0.5 cup), and top with red onion (0.25 cup).
