Using a sharp knife, quarter the cherry tomatoes (1 cup). Cut the english cucumbers (1 cup) into equal size pieces. Dice the red onion (0.25 cup), halve the kalamata olives (0.25 cup), and mince the fresh parsley (0.5 cup).

Combine all the salad ingredients in a large bowl. Toss to combine. Add the olive oil (2 tbsp), lemon juice (2 tbsp), [salt] and pepper and toss to combine. Taste and adjust seasonings.
