
Chopped Greek Salad
This Chopped Greek Salad is your new obsession! It’s a classic Greek salad, but even better: it’s diced into tiny cubes so you taste every flavor with every spoonful. Packed with fresh vegetables like cucumbers, tomatoes, bell pepper, red onion, and Kalamata olives, tossed in a simple Greek vinaigrette with dried oregano, and finished with creamy vegan feta. It’s perfect as a refreshing side dish or a satisfying main course with added protein.

Dice the cucumbers (2 persian), tomatoes (2 medium), pepper (0.5 bell), onion (0.25 red) and kalamata olives (60 g) into tiny cubes, approximately the same size, and add to a large bowl. (Soak the onion (0.25 red) in [water] for 10 minutes to remove the harsh flavor).

In a small bowl or ramekin, add the extra virgin olive oil (3 tbsp), red wine vinegar (2 tbsp), dried oregano (1 tsp) and [salt]. Whisk to combine.

Pour the dressing over the salad and lightly toss to combine all the ingredients.

Crumble over the vegan feta (70 g) and gently mix again. Serve up and enjoy your Chopped Greek Salad.
