Instructions

  1. 1

Pour [oil for frying] into a deep fryer or large heavy pot and heat to 375 degrees F.

  2. 2

In a small bowl, mix together the ground flax seeds (1 tbsp) and water (2 tbsp) to make a vegan flax egg. Let set aside for 10 minutes.

  3. 3

In a separate bowl, add the all purpose flour (1.5 cups), granulated sugar (2 tbsp), baking powder (0.5 tbsp), and salt (0.125 tsp). Whisk together.

  4. 4

After 10 minutes, add the oat milk (1.33 cup) and vanilla extract (0.5 tsp) to the flax egg. Whisk into the dry ingredients just until combined, forming a pancake-like batter. Add another splash or two of [oat milk] if needed to reach desired consistency.

  5. 5

Once your [oil for frying] has come to temperature, add the batter mixture to a funnel, covering the opening with your finger.

  6. 6

Hold the funnel over the hot [oil for frying], carefully remove your finger, and spiral or free-form a lattice design until the mixture has emptied from the funnel.

  7. 7

Let cook for 1-2 minutes until golden, then use tongs to carefully flip over to the other side.

  8. 8

Very carefully, using tongs, remove to a cooling rack or paper towel-lined plate. Allow to cool for 5 minutes.

  9. 9

    Repeat with the remaining batter.

  10. 10

Top with [powdered sugar for topping] once cooled, or any other desired [additional toppings, optional].
