
Cheesecake Dip
If you are a cheesecake lover, then you absolutely must give this dip a go! The addition of butter beans as an unexpected ingredient gives this dip a creamy texture while providing ample fiber and protein. Surprisingly, you won't even notice the presence of butter beans. We believe that fresh strawberries make an excellent accompaniment for this cheesecake dip, but feel free to use any fruit you prefer—it's sure to be a delightful combination. Optionally, top with crushed digestive cookies or freeze-dried raspberries. Store in an airtight container in the fridge for up to 3 days.

Add all of the dip ingredients (cooked butter beans (1.5 cup), cashew butter (0.25 cup), plain vegan cream cheese (0.25 cup), maple syrup (3 tbsp), pure vanilla extract (2 tsp), salt (1 pinch)) to a small food processor.

Blend until smooth and serve with your favourite fruit, such as fresh strawberries (2 cup). Enjoy!
